Black beans and Rice
Black Beans and Rice in the Crockpot
2 cans Black beans drained and rinsed
3/4 cup brown rice
1 1/2 cup water
3/4 cup salsa (you can add more if you want)
1 bay leaf
1 tsp cumin
2 garlic cloves diced
1 roma tomato diced
2 tablespoons red onion
Place the above in a crockpot, cover and cook on low for 3 to 5 hours.
Add salt, pepper, red onions, roma tomatoes and line juice to taste. If you want to you can even add more salsa.
