Black beans and Rice
Black Beans and Rice in the Crockpot
- 2 cans Black beans drained and rinsed
- 3/4 cup brown rice
- 1 1/2 cup water
- 3/4 cup salsa (you can add more if you want)
- 1 bay leaf
- 1 tsp cumin
- 2 garlic cloves diced
- 1 roma tomato diced
- 2 tablespoons red onion
Place the above in a crockpot, cover and cook on low for 3 to 5 hours. Add salt, pepper, red onions, Roma tomatoes and line juice to taste. If you want to you can even add more salsa.
