Black beans and Rice


Black Beans and Rice in the Crockpot


  • 2 cans Black beans drained and rinsed
  • 3/4 cup brown rice
  • 1 1/2 cup water
  • 3/4 cup salsa (you can add more if you want)
  • 1 bay leaf
  • 1 tsp cumin
  • 2 garlic cloves diced
  • 1 roma tomato diced
  • 2 tablespoons red onion

Place the above in a crockpot, cover and cook on low for 3 to 5 hours. Add salt, pepper, red onions, Roma tomatoes and line juice to taste. If you want to you can even add more salsa.
